I have a weakness for sweets, and the ubiquitous circus peanut is an unfortunate craving.
To try and maintain some semblance of nutrition (marginal, mind you), I am an avid baker and always looking for ways to use foods that might be past their prime in my kitchen. Zucchini, squash, strawberries and many more, have found their way into delicious concoctions. My new favorite is banana cake. I usually make bread or muffins with my bruised fruit, but this sounded too good to pass up.
It ended up being our favorite confection made with bananas.
